INGREDIENTS

For the Chicken:
  • 6–8 boneless skinless chicken thighs
  • 1 tbsp olive oil
  • 1–2 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 lemon, sliced
  • 6–8 whole garlic cloves (peeled)
  • 3–4 fresh thyme sprigs
  • 1 tsp paprika (optional for color)
Garlic–Shallot Butter:
  • 4 tbsp unsalted butter
  • 2–3 shallots, finely diced
  • 4 cloves garlic, minced
  • ½ cup chicken broth
  • 1 tbsp fresh lemon juice
  • 1 tbsp Dijon mustard (optional but delicious)
Glaze:
  • 1 cup peach slices
  • 1 cup maple syrup

INSTRUCTIONS

1. Preheat the Yoder
Set your Yoder Smoker YS640s to 275°F using your preferred wood pellets. Fruitwood or hickory works beautifully for poultry.

2. Season the Chicken
Pat chicken thighs dry. Drizzle with olive oil and season with salt, pepper, garlic powder, and paprika. Let sit while you prepare your skillet.

3. Build the Garlic–Shallot Butter
Place a cast iron skillet directly on the grates. Add butter and let it melt. Stir in diced shallots and minced garlic, cooking until fragrant and softened — about 5 minutes.

4. Layer the Flavor
Nestle the chicken thighs into the skillet. Add lemon slices, whole garlic cloves, and fresh thyme around the chicken. Pour in the chicken broth and lemon juice.

5. Smoke the Chicken Close the lid and smoke for 30-40 minutes, or until the chicken reaches an internal temperature of 175°F for tender, juicy thighs. Baste occasionally by spooning the garlic-butter mixture over the chicken.
